A coffee plantation outside Arusha, and the first night's lesson that schedules no longer matter.

Most safaris begin with an airstrip. Ours began with coffee. Legendary Lodge is a colonial coffee plantation outside Arusha, and we spent our first night in Tanzania there on purpose: one evening to let the long journey drain out of us before the small planes and the bush took over.

It was the perfect decompression chamber. Bird calls instead of alarms. Lazy views of the mountains. Rich Tanzanian coffee, grown more or less where you are drinking it. And somewhere in the course of that first afternoon, the quiet mental shift that happens when you realise schedules no longer matter, and will not for some time.

There is a case for going straight to the bush, and we have made it ourselves on other trips. Arusha changed our minds. A night on the plantation means you arrive at the first camp already slowed down, already listening, rather than still carrying the airport with you. The lodge does not compete with what comes next. It simply gets you ready for it.

The next morning we packed for the light aircraft that would carry us closer to the wild. Few things sharpen the anticipation of a safari like a last, unhurried breakfast on a veranda, knowing the next runway will be a strip of dirt carved into open savannah.
